Ingredients:

-Lahsan (Garlic) 15-20 cloves

-Sukhi lal mirch (Dried red chillies) 6-7

-Sabut dhania (Coriander seeds) 1 tbs

-Rai dana (Mustard seeds) 1 tsp

-Zeera (Cumin seeds) ½ tbs

-Mongphali (Peanuts) 2 tbs

-Water 2 Cups or as required

-Himalayan pink salt ½ tbs

-Baingan (Eggplant) 750g

-Cooking oil ¼ Cup

-Curry patta (Curry leaves) 15-20

-Himalayan pink salt 1 tsp or to taste

-Haldi powder (Turmeric powder) 1 tsp

-Tamatar (Tomatoes) chopped 3 medium

-Kalonji (Nigella seeds) ¼ tsp

-Imli pulp (Tamarind pulp) 3 tbs

-Hara dhania (Fresh coriander) chopped

 

Directions:

-In frying pan,add garlic,dried red chillies,coriander seeds,mustard seeds,cumin seeds,peanuts & dry roast on low flame until fragrant.

-Let it cool.

-In a spice mixer,add roasted spices,grind coarsely & set aside.

-In a bowl,add water,pink salt & mix well.

-Cut eggplant into small cubes.

-In water,add eggplant & soak for 15-20 minutes then strain.

-In a wok,add cooking oil,curry leaves,eggplant,mix well & cook on medium flame for 1-2 minutes.

-Add pink salt,turmeric powder,tomatoes & mix well,cover & cook on low flame for 10-15 minutes then cook on high flame for a minute.

-Add ground achari spices,nigella seeds,mix well & cook on medium flame for 1-2 minutes.

-Add tamarind pulp & mix well.

-Add fresh coriander & mix well.

-Garnish with fresh coriander & serve!
