Ingredients:
-Cooking oil 1 tbs
-Blue band margarine 2 tbs
-Hari mirch (Green chillies) sliced 3-4
-Zeera (Cumin seeds) 2 tsp
-Pyaz (Onion) sliced 2 medium
-Chicken boiled & shredded 500g
-Chicken yakhni (Stock) ½ Cup
-Kashmiri lal mirch (Kashmiri red chilli) powder 1 tbs
-Haldi powder (Turmeric powder) ¼ tsp
-Sabut dhania (Coriander seeds) roasted & crushed 2 tsp
-Lal mirch (Red chilli) crushed 1 tsp
-Himalayan pink salt 1 tsp or to taste
-Lemon juice 1 tbs
-Hara dhania (Fresh coriander) chopped 2-3 tbs
-Cheddar & Mozzarella cheese grated 100g
-Fine atta (Fine flour) sifted 3 Cups
-Himalayan pink salt 1 tsp or to taste
-Blue band margarine 1 & ½ tbs
-Warm water 1 Cup or as required
-Cooking oil ½ tbs
-Blue band margarine ½ tbs
-Blue band margarine 1 tsp
Directions:
-In a wok,add cooking oil,margarine & let it melt.
-Add green chillies,cumin seeds,mix well & cook for a minute.
-Add onion,mix well & cook on medium flame until onions are translucent.
-Add chicken,chicken stock,kashmiri red chilli powder,turmeric powder,coriander seeds,red crushed chilli,pink salt,lemon juice,fresh coriander,mix well & cook on high flame until it dries up.
-Let it cool.
-Add cheddar & mozzarella cheese,mix well & set aside.
-In a bowl,add fine flour,pink salt,margarine & mix well until it crumbles.
-Gradually add warm water & knead until dough is formed,grease with cooking oil,cover & let it rest for 15 minutes.
-Grease hand with oil & knead dough again until smooth.
-Take a dough (100g) & make a ball,sprinkle dry flour & roll out with the help of rolling pin.
-Add prepared filling (2-3 tbs) & fold all sides to seal the filling & prick with toothpick.
-Sprinkle dry flour & roll out with the help of rolling pin & prick with the help of fork.
-Heat griddle,add cooking oil,margarine,let it melt & fry paratha from both sides until done with margarine (makes 6).
-Serve with raita!
