Ingredients:
Prepare Chutney Aloo Bharta:
-Zeera (Cumin seeds) 1 tsp
-Sabut dhania (Coriander seeds) 1 & ½ tsp
-Lehsan (Garlic) cloves 5-6
-Adrak (Ginger) 1-inch piece
-Hari mirch (Green chillies) 6-7
-Hara dhania (Fresh coriander) handful
-Lemon juice 1 tbs
-Cooking oil 3-4 tbs
-Raidana (Mustard seeds) black 1 tsp
-Zeera (Cumin seeds) ½ tsp
-Curry patta (Curry leaves) 10-12
-Haldi powder (Turmeric powder) ½ tsp
-Himalayan pink salt 1 tsp or to taste
-Aloo (Potatoes) boiled 5-6 medium
-Water 1 & ¼ Cup
Prepare Masala Kachori:
-Baisan gathiya 1 & ½ Cup
-Mongphali (Peanuts) roasted 2 tbs
-Lehsan (Garlic) 3-4 cloves
-Sabut dhania (Coriander seeds) ½ tbs
-Zeera (Cumin seeds) 1 tsp
-Himalayan pink salt 1 tsp or to taste
-Kali mirch powder (Black pepper powder) 1 tsp
-Lal mirch powder (Red chilli powder) 1 & ½ tsp or to taste
-Haldi powder (Turmeric powder) 1 tsp
-Imli pulp (Tamarind pulp) 1 tbs
-Hara dhania (Fresh coriander) handful
-Maida (All-purpose flour) sifted 2 & ½ Cups
-Sooji (Semolina) 2 tbs
-Himalayan pink salt 1 tsp or to taste
-Ghee (Clarified butter) 2 tbs
-Water 1 Cup or as required
-Cooking oil for frying
Directions:
Prepare Chutney Aloo Bharta:
-In a mortal & pestle,add cumin seeds,coriander seeds,garlic,ginger,green chillies,fresh coriander,lemon juice,crush coarsely & set aside.
-In a wok,add cooking oil,mustard seeds,cumin seeds,curry leaves & mix well.
-Add crushed mixture,turmeric powder,pink salt & mix well.
-Turn off the flame,add potatoes & mash roughly with the help of masher.
-Turn on the flame & mix well.
-Add water,mix well & cook on medium flame for 3-4 minutes.
Prepare Masala Kachori:
-In a chopper add baisan gathiya,peanuts,garlic,coriander seeds,cumin seeds,pink salt,black pepper powder,red chilli powder,turmeric powder,tamarind pulp,fresh coriander,chop well & set aside.
-In a bowl,add all-purpose flour,semolina,pink salt,clarified butter & mix well.
-Gradually add water,mix well & knead until dough is formed,cover with cling wrap & let it rest for 30 minutes.
-Knead dough again until smooth.
-Take a dough ball (50g),make a ball & spread it with hands.
-Take 1 tbs of prepared filling,press to make a ball than place it in the center of the dough,seal all edges to make a ball & spread it.
-In a wok,heat cooking oil (150-160°C) & fry kachori on medium low flame until golden brown (makes 14).
-Serve masala kachori with aloo bharta!

-Mortal & pestle mein zeera,sabut dhania,lehsan,adrak,hari mirchein,hara dhania aur lemon juice dal ker coarsely crush ker lein & side per rakh dein.
-Karahi mein cooking oil,raidana,zeera aur curry patta dal ker ache tarhan mix karein.
-Crushed mixture,haldi powder aur pink salt dal ker ache tarhan mix ker lein.
-Chulha on karein aur aloo dal ker masher ki madad sa roughly mash ker lein.
-Chulha on karein aur ache tarhan mix ker lein.
-Pani dal ker ache tarhan mix karein ayr darmiyani ancch per 3-4 minutes kliya paka lein.
Prepare Masala Kachori:
-Chopper mein baisan gathiya,mongphali,sabut dhania,zeera,pink salt,kali mirch powder,lal mirch powder,haldi powder,imli pulp aur hara dhania dal ker ache tarhan chop ker lein & side per rakh dein.
-Bowl mein maida,sooji,pink salt aur ghee dal ker ache tarhan mix karein.
-Thora thora ker ka pani shamil karein aur ghond ker dough tayyar ker lein,cling wrap sa cover karein aur 30 minutes kliya chor dein.
-Dough ko smooth ho janay tak dubara ghond lein.
-Dough ball (50g) la ker ball bana lein aur haath ki madad sa pheela lein.
-Tayyar filling 1 tbs la ker ball bana lein aur dough ka center mein rakh ker edges ko seal ker lein aur haath ki madad sa pheela lein.
-Karahi mein cooking oil garam karein (150-160°C) & kachori ko darmiyani halki ancch per golden brown ho janay tak fry ker lein (makes 14).
-Masala kachori ko aloo bharta ka saath serve karein!
