Prepare Rara Masala:

-Tez patta (Bay leaves) 2

-Kashmiri lal mirch (Kashmiri red chillies) 2

-Sabut dhania (Coriander seeds) 1 & ½ tbs

-Zeera (Cumin seeds) 1 & ½ tbs

-Laung (Cloves) 3-4

-Saunf (Fennel seeds) 1 tsp

-Sukhi lal mirch (Dried red chillies) 4-5

-Sabut kali mirch (Black peppercorns) 1 tsp

-Darchini (Cinnamon sticks) 2

Prepare Seekh Rara:

-Chicken qeema (Mince) 450g

-Hara dhania (Fresh coriander) chopped handful

-Pyaz (Onion) finely chopped 1 medium

-Himalayan pink salt ½ tsp or to taste

-Adrak lehsan paste (Ginger garlic paste) 1 tbs

-Lal mirch powder (Red chilli powder) 1 tsp or to taste

-Hari mirch (Green chilli) chopped 1 tbs

-Podina (Mint leaves) chopped 1-2 tbs

-Ghee (Clarified butter) 1 tbs

-Lemon juice 1 & ½ tbs

-Baisan (Gram flour) 2 tbs (optional)

-Cooking oil 3-4 tbs

-Koyla (Charcoal) for smoke

Prepare Gravy:

-Cooking oil 3 tbs

-Pyaz (Onion) finely chopped 2 medium

-Tamatar (Tomatoes) finely chopped 2-3 medium

-Adrak lehsan paste (Ginger garlic paste) ½ tbs

-Haldi powder (Turmeric powder) 1 tsp

-Himalayan pink salt ½ tsp or to taste

-Chicken qeema (Mince) 300g

-Water 1 Cup or as required

-Water 1 Cup

-Hara dhania (Fresh coriander) chopped



Prepare Rara Masala:

-In a frying pan,add bay leaves,kashmiri red chillies,coriander seeds,cumin seeds,cloves,fennel seeds, dried red chillies,black peppercorns,cinnamon sticks & dry roast on low flame until fragrant.

-Let it cool.

-In a spice mixer,add roasted spices & grind well.Rara masala is ready!

Prepare Seekh Rara:

-In a large dish,add chicken mince,fresh coriander,onion,2 tbs of prepared rara masala,pink salt, ginger garlic paste,red chilli powder,green chilli,mint leaves,clarified butter,lemon juice & mix well.

-If the batter becomes runny,add 2 tbs of gram flour & mix well.

-Take a small quantity of mixture (60g) & make kababs on wooden skewer (makes 8-10).

-In a wok,add cooking oil & fry kababs on low flame from all sides until golden brown.

-Give coal smoke for 2 minutes.

Prepare Gravy:

-In the same wok,add onion & sauté until translucent.

-Add tomatoes,ginger garlic paste,mix well & cook for 2-3 minutes.

-Add turmeric powder,pink salt,remaining rara masala & mix well.

-Add chicken mince,mix well & cook on medium flame for 2-3 minutes.

-Add water & mix well,cover & cook on medium flame for 10-12 minutes then cook on high flame until oil separates.

-Add water & mix well.

-Add prepared seekh kabab,fresh coriander,cover & simmer on low flame for 4-5 minutes & serve!
