Recipe in English:

 

Ingredients:

Prepare Green Chutney:

-Hara dhania (Fresh coriander) 1 Cup

-Podina (Mint leaves) 1 Cup

-Lehsan (Garlic) cloves 2

-Zeera (Cumin seeds) 1 tsp

-Himalayan pink salt ½ tsp or to taste

-Hari mirch (Green chillies) 6-7

-Imli pulp (Tamarind pulp) 3-4 tbs

-Water ¼ Cup or as required

Prepare Imli ki Meethi Chutney:

-Gur (Jaggery) 250g

-Lal mirch powder (Red chili powder) ¼ tsp or to taste

-Zeera (Cumin seeds) roasted & crushed ½ tsp

-Kala namak (Black salt) ½ tsp

-Adrak powder (Ginger powder) ½ tbs

-Imli pulp (Tamarind pulp) 3 tbs

-Water 1 Cup or as required

-Cornflour 2 tsp

-Water 1-2 tbs

Prepare Bhel Puri:

-Murmuray (Puffed rice) 3 Cups

-Mixed nimco 1 & ½ Cup

-Pyaz (Onion) chopped 1 medium

-Tamatar (Tomato) deseeded & chopped 1 medium

-Aloo (Potatoes) boiled & cubes 2 medium

-Kheera (Cucumber) deseeded & chopped 1 medium

-Kalay chanay (Black chickpeas) boiled 1 & ½ Cup

-Chana daal (Split bengal gram) 3 tbs (soaked for 6 hours) optional

-Crushed mixed pickle 1 tbs with oil

-Hari mirch (Green chillies) chopped 2

-Adrak (Ginger) grated 1 tsp

-Kala namak (Black salt) 1 tsp

-Chaat masala 1 tsp

-Tatri (Citric acid) ¼ tsp

-Hara dhania (Fresh coriander) chopped handful

-Lemon juice 2-3 tbs

-Koyla (Charcoal) for smoke

 

Directions:

Prepare Green Chutney:

-In a blender jug,add fresh coriander,mint leaves,garlic,cumin seeds,pink salt,green chillies,tamarind pulp,water,blend well & set aside.

Prepare Imli ki Meethi Chutney:

-In a saucepan,add jaggery,red chilli powder,cumin seeds,black salt,ginger powder,tamarind pulp & water.

-Turn on the flame,mix well,bring it to boil & cook on medium flame until jaggery is dissolved.

-In cornflour,add water & mix well.

-Now add dissolved cornflour,mix well & cook on low flame until it thickens.

-Let it cool.

Prepare Bhel Puri:

-In a wok,add puffed rice & dry roast on low flame until crispy & light golden (3-4 minutes).

-Take out in a bowl,add mixed nimco,onion,tomato,potatoes,cucumber,black chickpeas,split bengal gram,crushed mixed pickle,green chillies,ginger,black salt,chaat masala,citric acid,fresh coriander,lemon juice,1-2 tbs of prepared imli ki meethi chutney,1-2 tbs of prepared green chutney & mix well.

-Give coal smoke for 2 minutes & serve!
