Smoky Double Mirch Qeema with Lifafa Paratha

Ingredients:

Prepare Smoky Double Hari Mirch Qeema:

-Kashmiri lal mirch (Kashmiri red chillies) soaked 2-3

-Dahi (Yogurt) thick ¾ Cup

-Hari mirch (Green chillies) 5-6

-Cooking oil ½ Cup or as required

-Pyaz (Onion) sliced 3 medium

-Hari mirch paste (Green chilli paste) ½ tbs

-Beef qeema (Mince) 750g

-Adrak lehsan paste (Ginger garlic paste) 1 tbs

-Lal mirch powder (Red chilli powder) 1 tsp or to taste

-Zeera powder (Cumin powder) 1 tsp

-Sabut dhania (Coriander seeds) crushed 1 & ½ tsp

-Namak (Salt) 1 tsp or to taste

-Kali mirch (Black pepper crushed) 1 tsp

-Garam masala powder ½ tsp

-Hari mirch (Green chillies) sliced4-5 or as required (add green chillies as per your liking)

-Hara dhania (Fresh coriander) chopped handful

-Charcoal for smoke

Prepare Crispy Lifafa Chakoor Paratha:

-Anda (Egg) 1

-Sugar 1 tbs

-Water 1 Cup

-Fine atta (Fine flour) sifted 3 Cups

-Namak (Salt) ½ tbs

-Ghee (Clarified Butter) 2 tbs

-Ghee (Clarified Butter) melted 1 tsp

-Ghee (Clarified butter) melted 2 tsp

-Ghee (Clarified butter) 1 tsp or as required

-Adrak (Ginger) julienne

 

Directions:

Prepare Smoky Double Hari Mirch Qeema:

-In a spice grinder,add Kashmiri red chillies,yogurt & grind well to make a paste & set aside.

-Deseed green chillies & cut into julienne shape & set aside.

-In a wok,add cooking oil,green chillies & fry on low flame until crispy (2 minutes) & reserve for garnishing.

-In the same oil,add onion & fry until light golden.

-Add green chilli paste,mix well & cook for a minute.

-Add beef mince and mix well until it changes color.

-Add ginger garlic paste,red chilli powder,cumin powder,coriander seeds,salt,black pepper crushed, garam masala powder,mix well & cook for 4-5 minutes.

-Add ground paste & mix well,cover & cook on low flame for 10-12 minutes.

-Add green chillies,fresh coriander and mix well,cover & simmer on low flame for 1-2 minutes.

-Give coal smoke for 2 minutes.

Prepare Crispy Lifafa Chakoor Paratha:

-In a small jug,add egg,sugar,water,whisk well & set aside.

-In a bowl,add fine flour,salt & mix well.

-Add clarified butter & mix well until it crumbles.

-Gradually add egg mixture & knead until soft dough is formed.

-Grease dough with ghee,cover & let it rest for 30 minutes.

-Transfer the dough on a clean working surface,stretch & knead the dough until smooth (2-3 minutes).

-Take a small dough (110g) & make a smooth ball.

-Add melted clarified butter & spread the dough with the help of hands.

-Add & spread melted clarified butter,fold from all four sides to make a square shape,press & spread the dough with the help of hands,sprinkle dry flour & roll out with the help of rolling pin.

-On heated griddle,place rolled dough,add clarified butter & cook from both sides until golden & crispy (makes 9-10).

-Garnish hari mirch qeema with fried green chillies,ginger & serve with crispy lifafa chakoor paratha.
