Ingredients:

Prepare Sabzi Pulao:

-Cooking oil 3 tbs

-Ghee (Clarified butter) 3 tbs

-Pyaz (Onion) sliced 1 small

-Badi elaichi (Black cardamom) 1

-Tez patta (Bay leaf) 1

-Badiyan ka phool (Star anise) 1

-Darchini (Cinnamon stick) 1

-Hari elaichi (Green cardamom) 3-4

-Sabut kali mirch (Black peppercorns) 10-12

-Zeera (Cumin seeds) 1 tsp

-Curry patta (Curry leaves) 15-20

-Hari mirch (Green chillies) 4-5

-Tamatar (Tomato) chopped 1 medium

-Adrak lehsan paste (Ginger garlic paste) 1 tbs

-Hari mirch (Green chilli) paste 2 tbs

-Dahi (Yogurt) whisked ¼ Cup

-Sabut dhania (Coriander seeds) roasted & crushed 1 tbs

-Saunf powder (Fennel powder) 1 tbs

-Zeera powder (Cumin powder) ½ tbs

-Garam masala powder ½ tsp

-Kali mirch powder (Black pepper powder) 1 tsp

-Himalayan pink salt 1 tsp or to taste

-Lal mirch (Red chilli) crushed 1 tsp

-Aloo (Potato) 1 Cup

-Matar (Peas) ¾ Cup

-Gajar (Carrot) ¾ Cup

-Phool gobhi (Cauliflower) florets 1 Cup

-Phaliyan (French beans) ½ Cup

-Water 3 Cups or as required

-Stock cube 1-2

-Chawal (Rice) sella 500g (soaked for 2 hours)

-Shimla mirch (Capsicum) diced 1 small

-Hara pyaz (Spring onion) leaves chopped 2 tbs

-Saffron essence ½ tsp

-Pyaz (Onion) fried 1/3 Cup

-Pyaz (Onion) fried

Prepare Kuchla Raita:

-Hari mirch (Green chillies) 3-4

-Lehsan (Garlic) cloves 5-6

-Sabut lal mirch (Button red chillies) 3-4

-Zeera (Cumin seeds) 1 tsp

-Kala namak (Black salt) ¼ tsp

-Himalayan pink salt ¼ tsp or to taste

-Podina (Mint leaves) handful

-Hara dhania (Fresh coriander) handful

-Lemon juice 1 tsp

-Dahi (Yogurt) whisked 1 Cup

 

Directions:

Prepare Sabzi Pulao:

-In a pot,add cooking oil,clarified butter & let it melt.

-Add onion,mix well & fry on medium flame until light golden.

-Add black cardamom,bay leaf,star anise,cinnamon stick,green cardamom,black peppercorrs,cumin seeds,curry leaves,green chillies & mix well.

-Add tomato,ginger garlic paste,green chilli paste,mix well & cook on medium flame for 2-3 minutes.

-On low flame,add yogurt,coriander seeds,fennel powder,cumin powder,garam masala powder,black pepper powder,pink salt,red chilli crushed,mix well & cook on medium flame until oil separates.

-Add potato,peas,carrot,cauliflower,french beans,mix well & cook for 2-3 minutes.

-Add water & mix well.

-Add stock cube,bring it to boil,cover & cook on low flame for 6-8 minutes.

-Add rice,mix well & cook on high flame until water is reduced (2-3 minutes).

-Add capsicum,spring onion leaves,saffron essence,fried onion,cover with kitchen cloth & lid and steam cook on low flame for 10-12 minutes.

-Sprinkle fried onion & serve!

Prepare Kuchla Raita:

-In a mortar pestle,add green chillies,garlic,button red chillies,cumin seeds,black salt,pink salt,mint leaves,fresh coriander,lemon juice & crush well.

-Add yogurt,whisk well & serve!
