Ingredients:

Prepare Paneer Bhallay:

-Cottage cheese 275g

-Aloo (Potatoes) boiled 2 medium (275g)

-Cornflour 4-5 tbs

-Lal mirch powder (Red chilli powder) 1 tsp or to taste

-Zeera (Cumin seeds) roasted & crushed 1 tsp

-Chaat masala ½ tsp

-Himalayan pink salt 1 tsp or to taste

-Hari mirch (Green chilli) chopped 1 tbs

-Adrak lehsan paste (Ginger garlic paste) 1 tsp

-Hara dhania (Fresh coriander) chopped handful

-Cooking oil for frying

Prepare Imli Chutney:

-Water 1 Cup

-Gur (Jaggery) crushed 100g

-Imli pulp (Tamarind pulp) 4 tbs

-Sukhi lal mirch (Dried red chillies) 5-6

-Ajwain (Carom seeds) ¼ tsp

-Kala namak (Black salt) ½ tsp

-Zeera (Cumin seeds) roasted & crushed ½ tsp

-Himalayan pink salt ½ tsp or to taste

-Hara dhania (Fresh coriander) handful

-Podina (Mint leaves) 10-12

-Zarda ka rang (Orange food color) ¼ tsp

-Cornflour 1 tbs

-Water 2 tbs or as required

Assembling:

-Dahi (Yogurt) whisked with salt

-Papri

-Green chutney

-Tamatar (Tomato) chopped

-Pyaz (Onion) chopped

-Chanay (Chickpeas) boiled

-Chaat masala

-Hara dhania (Fresh coriander) chopped

 

Directions:

Prepare Paneer Bhallay:

-In a bowl,grate cottage cheese & potatoes with the help of grater.

-Add cornflour,red chilli powder,cumin seeds,chaat masala,pink salt,green chilli,ginger garlic paste,fresh coriander,mix & knead until well combined.

-With the help of greased hands,take a mixture (80g) & make bhalla of equal sizes.

-In a wok,heat cooking oil & fry bhallas on low flame until golden brown & crispy (makes 8-10).

Prepare Imli Chutney:

-In a saucepan,add water,jaggery,tamarind pulp,dried red chillies,carom seeds,balck salt,cumin seeds, pink salt,fresh coriander,mint leaves & blend well with the help of blender.

-Turn on the flame & bring it to boil.

-Add orange food color & mix well.

-In cornflour,add water & mix well.

-Now add dissolved cornflour,mix well & cook on low flame until it thickens.

-Let it cool.

Assembling:

-In a serving plate,place fried bhallay & break them with spoon.

-Add yogurt,papri,prepared imli chutney,green chutney,tomato,onion,chickpeas & papri.

-Sprinkle chaat masala,fresh coriander & serve!
