Kachori Chaat

Ingredients:

Prepare Aloo Chana Tarkari:

-Cooking oil 2 tbs
-Ajwain (Carom seeds) ¼ tsp
-Pyaz (Onion) chopped 2 tbs
-Adrak lehsan paste (Ginger garlic paste) 1 tsp
-Achar (Pickle) 1 tbs
-Haldi powder (Turmeric powder) 1 tsp
-Himalayan pink salt ½ tsp or to taste
-Lal mirch powder (Red chilli powder) 1 tsp or to taste
-Lemon juice 2-3 tbs
-Safed chanay (Chickpeas) boiled 1 Cup
-Aloo (Potatoes) boiled 2-3 medium
-Chickpea water 1 Cup

Prepare Masala Kachori:
-Daal chana nimco ¾ Cup
-Gathia nimco ½ Cup
-Chaat masala 1 tsp
-Lal mirch powder (Red chilli powder) 1 tsp or to taste
-Hari mirch (Green chilli) chopped 1 tsp
-Hara dhania (Fresh coriander) chopped 1-2 tsp

-Maida (All-purpose flour) 2 & ½ Cups
-Sooji (Semolina) ½ Cup
-Himalayan pink salt 1 tsp or to taste
-Ghee (Clarified butter) 2-3 tbs
-Water 1 Cup or as required

-Cooking oil for frying

Assembling:
-Dahi (Yogurt) whisked
-Chaat masala
-Hari chutney (Green sauce)
-Imli ki meethi chutney
-Pyaz (Onion) sliced
-Lal mirch (Red chilli) crushed

-Nimco sev
-Hara dhania (Fresh coriander) chopped

 

Directions:

Prepare Aloo Chana Tarkari:

-In a wok,add cooking oil,carom seeds,onion & fry until light golden.
-Add ginger garlic paste,pickle,turmeric powder,pink salt,red chilli powder,lemon juice,mix well & cook for a minute.
-Add chickpeas,potatoes (crush with hand),mix well & mash coarsely.
-Add chickpea water (1 Cup),mix well & cook on medium flame for 1-2 minutes & set aside.

Prepare Masala Kachori:

-In a spice mixer,add daal chana nimco & grind well.
-Add gathia nimco,chaat masala,red chilli powder,green chilli,fresh coriander,grind well & set aside.

-In a bowl,add all-purpose flour,semolina,pink salt,clarified butter & mix well until it crumbles.
-Gradually add water,mix well & knead until dough is formed.
-Grease with clarified butter,cover & let it rest for 15 minutes.

-Knead dough again until smooth.
-Take (40g) of dough & make a ball,spread with the help of hand,add prepared filling (1 tsp),fold & seal properly & spread with the help of hand (makes 16-18).
-In a wok,heat cooking oil & fry kachori on medium flame from both sides until golden.

Assembling:

-On serving dish,break kachoris,add prepared tarkari,yogurt,chaat masala,green chutney,imli ki meethi chutney,onion,red chilli crushed,nimco sev,fresh coriander & serve!
