Homemade Peshawari Mango Ice cream

Recipe in English:

 

Ingredients:

-Aam (Mango) cubes 2 Cups

-Doodh (Milk) 1 litre

-Sugar ¾ Cup or to taste

-Cream 2 Cups

-Yellow food color 3-4 drops (optional)

-Mango essence ½ tsp

 

Directions:

-In a blending jar,add mango,blend well to make a puree & set aside.

-In a wok,add milk,bring it to boil & keep stirring in between.

-Add sugar,mix well & cook on medium flame until sugar is dissolved (3-4 minutes).

-Turn off the flame & let it rest for a minute.

-Add cream & whisk well.

-Add mango puree & whisk until well combined.

-Add yellow food color & mix well,turn on the flame & cook on medium flame until it thickens (2-3 minutes).

-Add mango essence & mix well.

-Let it cool while mixing then strain well with the help of the strainer.

-Transfer the mixture to an airtight container,tap few times,cover the surface with cling wrap and lid & freeze for 8 hours or overnight in freezer.

-Take out from the freezer,remove cling wrap & let it rest for 2 minutes.

-Cut ice cream into cubes with the help of the knife.

-In chopper,add ice cream & chop well until smooth.

-Transfer the mixture into an airtight container,cover the surface with cling wrap and lid & freeze for 8 hours (yield: 1 litre).

-Once frozen completely,scoop out & serve!
