Ingredients:

-Gandum (Wheat) 1 Cup (soaked overnight)

-Jau (Barley) 1 Cup (soaked overnight)

-Chana daal (Split bengal gram) ¾ Cup (soaked overnight)

-Masoor daal (Red lentil) ½ Cup (soaked overnight)

-Mash daal (White lentil) ¼ Cup (soaked overnight)

-Moong daal (Yellow lentil) ½ Cup (soaked overnight)

-Chawal (Rice) tota ¼ Cup (soaked overnight)

-Water 3-4 litres or as required

-Cooking oil ½ Cup

-Darchini (Cinnamon sticks) 2-3

-Sabut kali mirch (Black peppercorns) ¼ tsp

-Tez patta (Bay leaves) 2

-Pyaz (Onion) sliced 3 medium

-Boneless chicken large pieces 750g

-Hari mirch (Green chilli) paste 1 & ½ tbs

-Adrak lehsan paste (Ginger garlic paste) 1 & ½ tbs

-Lal mirch powder (Red chilli powder) 1 & ½ tbs or to taste

-Dhania powder (Coriander powder) 1 tbs

-Himalayan pink salt 2 tsp or to taste

-Haldi powder (Turmeric powder) ½ tbs

-Zeera powder (Cumin powder) ½ tbs

-Garam masala powder 1 tsp

-Javitri powder (Mace powder) ½ tsp

-Jaifil powder (Nutmeg powder) ¼ tsp

-Elaichi powder (Cardamom powder) ½ tsp

-Dahi (Yogurt) whisked 1 Cup

-Water 3 Cups

-Hot water 1 & ½ Cup or as required

Prepare Tarka:

-Cooking oil ½ Cup

-Pyaz (Onion) sliced 1 medium

-Hara dhania (Fresh coriander) chopped

-Pyaz (Onion) fried

-Adrak (Ginger) julienne

-Hari mirch (Green chilli) sliced

-Chaat masala

 

Directions:

-In a cauldron,add wheat,barley,split bengal gram,red lentil,white lentil,yellow lentil,rice,water & bring it to boil.

-Remove scum,cover & cook on low flame until tender (approx. 2-3 hours).

-Check in between & add hot water,if required.

-In a pot,add cooking oil,cinnamon sticks,black peppercorns,bay leaves,onion,mix well & fry until light golden.

-Add chicken,green chilli paste,ginger garlic paste,mix well & cook on medium flame for 4-5 minutes.

-Add red chilli powder,coriander powder,pink salt,turmeric powder,cumin powder,garam masala powder, mace powder,nutmeg powder,cardamom powder,mix well & cook on medium flame for 2-3 minutes.

-Add yogurt & mix well.

-Add water,mix well & bring it to boil,cover & cook on low flame until chicken is tender (40-45 minutes).

-Remove & discard bay leaves & cinnamon sticks.

-Turn off the flame,mash well & set aside.

-Mash lentil mixture with the help of wooden masher for 15-20 minutes.

-Add mashed chicken with gravy,mix well & mash again with the help of wooden masher & cook on low flame for 30 minutes.

-Add hot water,mix well & cook on low flame for 4-5 minutes.

Prepare Tarka:

-In a saucepan,add cooking oil & heat it.

-Add onion & fry until golden.

-Now add prepared tarka in daleem & mix well.

-Garnish with fresh coriander,fried onion,ginger,green chilli,chaat masala & serve!
