Ingredients:
-Coconut milk ½ Cup
-Thai curry paste 1 & ½ tbs
-Coconut milk 1 & ½ Cup
-Bareek cheeni (Caster sugar) 1 tsp
-Imli pulp (Tamarind pulp) ½ tbs
-Lemon grass chopped 1 tbs
-Lime leaves chopped 3-4
-Adrak (Ginger) 2-inch piece
-Fish sauce 1 tsp
-Chicken Stock 1 & ½ Cup (2 chicken cubes dissolve in 1 & ½ cup of water)
-Chicken quarters pieces 3
-Cooking oil 1-2 tbs
-Fish sauce 1 & ½ tbs
-Soy sauce 1 tsp
-Lal mirch (Red chilli) crushed ½ tsp
-Kali mirch (Black pepper) crushed ½ tsp
-Chicken powder ½ tsp
-Brown sugar ½ tsp
-Iodized Himalayan pink salt ¼ tsp or to taste
-Sonth powder (Ginger powder) ½ tsp
-Haldi powder (Turmeric powder) 1 tsp
-Lehsan (Garlic) finely chopped 1 tbs
-Lime leaves roughly cut 4-5
-Lemon grass chopped 1 tbs
-Hara dhania (Fresh coriander) stem 5-6
Assembling:
-Egg noodles boiled 150g
-Crispy Egg noodles 50g (boil noodles then coat in cornflour & deep fry)
-Bok choy leaves 2-3
-Lemon wedge
-Hara dhania (Fresh coriander)
-Adrak (Ginger) julienne
-Thai red chilli sliced
Directions:
-In a cooking pot,add coconut milk,thai curry paste,mix well & cook on low flame for 2-3 minutes.
-Add remaining coconut milk,mix well & bring it to boil.
-Add chicken powder,caster sugar,tamarind pulp,lemon grass,lime leaves,ginger,fish sauce,mix well & cook on medium flame for 2-3 minutes.
-Add chicken stock,mix well & cook on low flame for 1-2 minutes then strain & set aside.
-Make cuts on chicken pieces with the help of a knife.
-In a small bowl,add red chilli crushed,black pepper crushed,chicken powder,brown sugar,pink salt, ginger powder,turmeric powder,garlic,lime leaves,lemon grass,coriander stem & mix well.
-In a bowl,add chicken,cooking oil,fish sauce,soy sauce,prepared spice mixture,mix & rub well,cover & marinate for 1 hour.
-In frying pan,add marinated chicken & cook on medium flame until light golden (2 minutes each side),cover & cook on low flame until done (5-6 minutes each side).
Assembling:
-In a serving bowl,add boiled egg noodles,cooked chicken,cooked curry,crispy egg noodles,bok choy leaves, lemon,fresh coriander,ginger,thai red chilli & serve!

-Cooking pot mein coconut milk aur Thai curry paste dal kar low flame par 2-3 minutes pakaen.
-Baqi coconut milk add kar ke achi tarah mix karein aur boil aane dein.
-Ab caster sugar, tamarind pulp, lemon grass, lime leaves, ginger aur fish sauce dal kar medium flame par 2-3 minutes pakaen.
-Chicken stock add kar ke 1-2 minutes low flame par pakaen, phir strain kar ke side par rakh dein.
-Chicken pieces par knife ki madad se cuts lagayen.
-Ek choti bowl mein red chilli crushed, black pepper crushed, chicken powder, brown sugar, pink salt, dry ginger powder, turmeric powder, garlic, lime leaves, lemon grass aur coriander stem dal kar mix karein.
-Ek bowl mein chicken, cooking oil, fish sauce, soy sauce aur yeh prepared spice mixture dal kar achi tarah rub karein, cover karke 1 ghanta marinate karein.
-Frying pan mein marinated chicken dal kar medium flame par dono sides 2-2 minutes golden karein, phir cover karke low flame par 5-6 minutes har side se cook karein.
Assembling:
-Serving bowl mein boiled egg noodles dal kar upar se cooked chicken, prepared curry, crispy egg noodles, bok choy leaves, lemon, fresh coriander, ginger aur Thai red chilli rakh kar serve karein.
