Ingredients:

Prepare Lehsan & Lal Mirch Chutney:

-Sukhi lal mirch (Dried red chillies) 10-12

-Hot water 1 Cup

-Lehsan (Garlic) 7-8 cloves

-Adrak (Ginger) 1-inch piece

-Sugar ½ tbs

-Chaat masala 1 tsp

-Himalayan pink salt ½ tsp or to taste

-Kashmiri lal mirch (Kashmiri red chilli) powder 1 tsp

-Zeera powder (Cumin powder) ½ tsp

-Lemon juice 2 tbs

-Tomato ketchup 2 tbs

-Water ¼ Cup or as required

Prepare Imli ki Lal Chutney:

-Imli pulp (Tamarind pulp) ¾ Cup

-Kala namak (Black salt) ½ tsp

-Saunf (Fennel seeds) crushed ½ tbs

-Zeera powder (Cumin powder) 1 tsp

-Adrak powder (Ginger powder) 1 tsp

-Lal mirch powder (Red chilli powder) 1 tsp or to taste

-Himalayan pink salt ½ tsp or to taste

-Chaat masala 1 tsp

-Cooking oil 1 tbs

-Zeera (Cumin seeds) ½ tsp

-Water 1 & ½ Cup or as required

-Sugar 1 Cup or to taste

-Red food color few drops

-Water 1-2 tbs

-Cornflour 1 tbs

Assembling:

-Chanay (Chickpeas) boiled 2 & ½ Cups

-Pyaz (Onion) 1 medium

-Tamatar (Tomato) 1 medium

-Aloo (Potato) boiled 2 medium

-Papri

-Lal mirch (Red chilli) crushed to taste

-Chaat masala to taste

-Kala namak (Black salt) to taste

-Nimco sev

-Dahi (Yogurt) whisked

-Anaar (Pomegranate)

-Hara dhania (Fresh coriander)

-Hari mirch (Green chilli) 1

 

Directions:

Prepare Lehsan & Lal Mirch Chutney:

-In a bowl,add dried red chillies,hot water & let them soak for 30 minutes than strain.

-In a grinder,add soaked red chillies,garlic,ginger,sugar,chaat masala,pink salt,kashmiri red chilli powder, cumin powder,lemon juice,tomato ketchup,water,grind well & set aside.

Prepare Imli ki Lal Chutney:

-In a bowl,add tamarind pulp,black salt,fennel seeds,cumin powder,ginger powder,red chilli powder,pink salt,chaat masala,mix well & set aside.

-In a saucepan,add cooking oil,cumin seeds & mix well.

-Add prepared mixture & mix well.

-Add water & mix well.

-Add sugar,red food color,mix well & cook on medium flame until sugar is dissolved (2-3 minutes).

-In water,add cornflour & mix well.

-Now add dissolved cornflour,mix well & cook on low flame until it thickens.

-Let it cool.

Assembling:

-In a balti,add chickpeas,onion,tomato,potato,papri,red chilli crushed,chaat masala,black salt,prepared lehsan & lal mirch chutney,prepared imli ki lal chutney & shake well.

-Dish out in a serving plate,garnish with nimco sev,prepared imli ki lal chutney,yogurt,pomegranate,fresh coriander & green chilli & serve!
