Ingredients:
Creamy Malai Boti:
-Dahi (Yogurt) 2 tbs
-Badam (Almond) grinded 1 tbs
-Kali mirch (Black pepper) crushed 1 tsp
-Safed mirch powder (White pepper powder) 1 tsp
-Kasuri meethi (Dried fenugreek leaves) 1 tsp
-Kacha papita paste (Raw papaya paste) 1 tbs
-Adrak lehsan paste (Ginger garlic paste) 1 tsp
-Hari mirch (Green chili) chopped 2 tbs
-Lemon juice 2 tbs
-Namak (Salt) 1 tsp
-Olper’s cream ½ cup
-Chicken cubes 500 gms
-Oil as required
-Koyla (Piece of coal)
-Oil few drops
Chatkhara Cheesy Sauce:
-Olper’s cream ½ cup
-Cheddar cheese 2 tbs (grated)
-Chart masala 1 tsp
Directions:
-In bowl,add yogurt,almond,black pepper,white pepper powder,dried fenugreek leaves,raw papaya paste,ginger garlic paste,green chili,lemon juice,salt and olper’s cream,mix well.
-Add chicken cubes,mix and marinate for 3-4 hours.
-Stew marinated chicken on skewers or bamboo skewers.
-In frying pan,add oil and shallow fry chicken skewers on medium low flame until done and give a coal smoke for 3-4 minutes or bake in preheated oven at 200 C for 10-15 minutes.
-For Chatkhara cheesy sauce,in bowl add olper’s cream,cheddar cheese,chart masala and microwave for 30 seconds,mix well until smooth,chatkhara cheesy sauce is ready.
-Drizzle sauce over chatkhara malai boti and serve.
