Ingredients:

Prepare Beef Malai Tikka

-Cream cheese 1 tbs

-Dahi (Yogurt) 1 Cup

-Olper’s cream ¾ Cup

-Hari mirch paste (Green chilli paste) 1 tbs or to taste

-Adrak lehsan paste (Ginger garlic paste) 1 & ½ tbs

-Kacha papita (Raw papaya) paste 1 tbs

-Sabut dhania (Coriander seeds) roasted & crushed 1 tbs

-Lal mirch (Red chilli) crushed 1 tsp

-Zeera (Cumin seeds) roasted & crushed ½ tbs

-Safed mirch powder (White pepper powder) 1 tsp

-Garam masala powder 1 tsp

-Badam (Almonds) powdered 2 tbs

-Kali mirch powder (Black pepper powder) 1 tsp

-Iodized Himalayan pink salt 1 tsp or to taste

-Kasuri methi (Dried fenugreek leaves) 1 & ½ tsp

-Lemon juice 1 tbs

-Boneless beef undercut boti 1 kg

-Cooking oil 2-3 tbs

-Koyla (Charcoal)

Prepare Biryani

-Cooking oil ½  Cup

-Zeera (Cumin seeds) 1tsp

-Badi elaichi (Black cardamom) 1

-Laung (Cloves) 3

-Darchini (Cinnamon stick) 1

-Sabut kali mirch (Black peppercorns) 7-8

-Hari elaichi (Green cardamoms) 2

-Pyaz (Onion) Sliced 2 medium

-Adrak (Ginger) crushed 1 tbs

-Lehsan (Garlic) crushed ½ tbs

-Lal mirch powder (Red chilli powder) 1 tsp or to taste

-Elaichi powder (Cardamom powder) ½ tsp

-Biryani masala powder 1 tbs

-Javitri powder (Mace powder) ½ tsp

-Jaifal powder (Nutmeg powder) ¼ tsp

-Doodh (Milk) ¼ Cup

-Cooking oil 2-3 tbs

-Chawal (Rice) sella Par-Boiled 750g

-Olper’s cream 2-3 tbs

-Pyaz (Onion) rings 1 small
-Podina (Mint leaves) chopped handful
-Hara dhania (Fresh coriander) chopped handful
-Lemon juice 2-3 tbs
-Hari Mirch (Green chillies) 3
-Zarday ka rang (Orange food color) ½ tsp

-Green food color 1 pinch
-Podina (Mint leaves) chopped handful
-Hara dhania (Fresh coriander) chopped handful
-Hari Mirch (Green chillies) 2
-Biryani essence ½ tsp
-Water ½ cup

 

Direction:

Prepare Beef Malai Tikka

-In a bowl, add cream cheese, yogurt, cream, green chilli paste, ginger garlic paste, raw papaya paste, coriander, red chilli crushed, cumin, white pepper powder, garam masala powder, almond powder, black pepper powder, pink salt, kasuri methi, lemon juice, whisk well.

-Add boneless beef & mix well.

-Cover & marinate for 2 hours or overnight.

-In a flat bottom wok, add cooking oil & heat it.

-Add marinate beef pieces (Reserve marinade for later use).

-Cover & cook on low flame for 30-40 minutes until beef is tender, check in between.

-Remove cover, mix well & cook on high flame until it dries up.

-Give a coal smoke, take out beef malai tikka pieces & set aside.
Prepare Biryani

-In the same pot, add cooking oil & heat it.

-Add cumin seeds, black cardamom, cloves, cinnamon, black peppercorn, green cardamom, mix well.

-Add onion slices, mix well, fry on medium flame until golden.

-Add ginger, garlic, mix well, sauté until fragrant.

-Add reserved marinade, red chilli powder, green cardamom powder, biryani masala powder, mace powder, nutmeg powder, mix well.

-Cook on medium flame until oil separates.

-Add milk, mix well & cook on medium flame for 1-2 minutes.

-Biryani Qorma is ready! Set aside.

-In a cooking pot, add cooking oil, add boiled rice half quantity, spread it, add biryani qorma, prepared beef boti tikka, make swirl of cream, onion rings, mint leaves, fresh coriander, lemon juice, slitted green chillies, add remaining boiled rice, orange food colour, green food colour, podina, fresh coriander, green chillies, biryani essence, water, cover & steam cook on low flame for 10-15 minutes.

-Serve with salad & raita!
