Ingredients:

Prepare Daqoos (Sahaweq)/Spicy Tomato Sauce:

-Tamatar (Tomatoes) 2 large

-Pyaz (Onion) roughly chopped 1 small

-Hari mirch (Green chillies) 3-4

-Lehsan (Garlic) 3-4 cloves

-Hara dhania (Fresh coriander) with stem handful

-Lemon juice 3-4 tbs

-Himalayan pink salt ¼ tsp to taste

Prepare Mutton Madhbi:  

-Mutton leg (large pieces) 750g

-Paprika powder 1 tsp

-Himalayan pink salt 1 tsp or to taste

-Zeera powder (Cumin powder) 1 tsp

-Haldi powder (Turmeric powder) ½ tsp

-Sumac powder 1 tsp

-Dried parsley 1 tsp

-Kali mirch powder (Black pepper powder) 1 tsp

-Lehsan powder (Garlic powder) 1 & ½ tsp

-Dried thyme 1 tsp

-Lal mirch powder (Red chilli powder) 1 tsp or to taste (optional)

-Lemon juice 2-3 tbs

-Cooking oil 3-4 tbs

-Cooking oil 1 tsp

-Water ¼ Cup if required

-Koyla (Charcoal) for smoke

Prepare Saffron Rice:

-Cooking oil 3-4 tbs

-Makhan (Butter) 2 tbs

-Pyaz (Onion) chopped 1 medium

-Water 4 Cups

-Himalayan pink salt 1 tsp or to taste

-Chicken stock cube 1

-Zafran (Saffron strands) ¼ tsp dissolved in 3 tbs of water

-Chawal (Rice) sella 500g (soaked for 1 hour)

-Hara dhania (Fresh coriander) chopped

 

Directions:

Prepare Daqoos (Sahaweq)/Spicy Tomato Sauce:

-In a blending jar,add tomatoes,onion,green chillies,garlic,fresh coriander,lemon juice,pink salt & blend well.Daqoos is ready!

Prepare Mutton Madhbi:  

-In small bowl,add paprika powder, pink salt,cumin powder,turmeric powder,sumac powder,dried parsley,black pepper powder,garlic powder,dried thyme,red chilli powder,lemon juice,cooking oil & mix well.

-In a bowl,add mutton,prepared marinade & marinade evenly,cover with cling wrap & marinate for 4 hours or overnight in refrigerator.

-In a wok,add cooking oil,marinated mutton & sear on medium flame from both sides (2 minutes each side).

-Add water (if required), cover & slow cook on very low flame for 1.5 hours then cook on high flame for 1-2 minutes.

-Turn off the flame & give coal smoke for 2 minutes.

Prepare Saffron Rice:

-In a cooking pot,add cooking oil,butter & let it melt.

-Add onion,mix well & sauté until translucent.

-Add water,pink salt,chicken cube,saffron water,mix well & bring it to boil.

-Add rice,mix well & cook on high flame until water is reduced, cover

 & steam cook on low flame for 8-10 minutes.

-Garnish with fresh coriander & serve mutton madhbi with saffron rice & prepared daqoos.
