Korean Veg & Cheese Filled Pancakes

Ingredients:

Prepare Veg Filling:

-Cooking oil 2 tbs

-Band gobhi (Cabbage) shredded 1 Cup

-Gajar (Carrot) chopped ½ Cup

-Shimla mirch (Capsicum) chopped ½ Cup

-Corn kernels boiled ¼ Cup

-Glass noodles 40g soaked in hot water

-Himalayan pink salt 1 tsp or to taste

-Lehsan powder (Garlic powder) 1 tsp

-Kali mirch powder (Black pepper powder) 1 & ½ tsp

-Sugar powdered 1 tsp

-Hara pyaz (Spring onion) chopped ½ Cup

-Soy sauce 3 tbs

-Til ka tel (Sesame oil) 2 tsp

Prepare Cheese Filling:

-Cheddar cheese grated 1 Cup

-Mozzarella cheese grated 1 Cup

-Fresh parsley chopped 1-2 tbs

-Himalayan pink salt 1 pinch or to taste

-Lehsan powder (Garlic powder) 1 tsp

-Lal mirch (Red chilli) crushed 1 tsp

-Kali mirch powder (Black pepper powder) ¼ tsp

Prepare Dough:

-Khameer (Instant yeast) 2 tsp

-Sugar 1 tbs

-Warm water ¾ Cup

-Maida (All-purpose flour) sifted 3 Cups

-Himalayan pink salt 1 tsp or to taste

-Warm water ¼ Cup or as required

-Cooking oil 2 tsp

-Cooking oil ½ tsp

-Cooking oil for frying

 

Directions:

Prepare Veg Filling:

-In a wok,add cooking oil,cabbage,carrot,capsicum,corn kernels,mix well & sauté for a minute.

-Add glass noodles,pink salt,garlic powder,black pepper powder,sugar,spring onion,soy sauce,sesame oil, mix well & cook on high flame for 1-2 minutes.

-Let it cool.

Prepare Cheese Filling:

-In a bowl,add mozzarella cheese,cheddar cheese,fresh parsley,pink salt,garlic powder,red chilli crushed, black pepper powder,mix well & set aside.

 

Prepare Dough:

-In a bowl,add instant yeast,sugar,warm water & mix well,cover & let it proof for 5 minutes.

-Add all-purpose flour,pink salt & mix well.

-Gradually add warm water,mix well & knead until dough is formed.

-Add cooking oil & knead again.

-Grease with cooking oil,cover with cling film & let it proof for 1-2 hours at warm place or until double in size.

-Grease hand with cooking oil & knead dough until smooth.

-Take a small dough (60g) & make a ball.

-Grease the surface with cooking oil & spread the dough ball with hand.

-Add veg filling or cheese filling in the center of dough,gather all the sides,pinch & seal properly.

-In a frying pan,heat cooking oil,place stuffed dough balls & fry on low flame until light golden (1-2 minutes) then press them with a patty presser & fry on low flame from both sides until golden & crispy (makes 12).
