Recipe in English:
Ingredients
-Lukewarm water as required
-Phulkiyan 1 & ½ Cup
Prepare Dahi Mixture:
-Dahi (Yogurt) 750g
-Sugar 2-3 tbs
-Himalayan pink salt ¼ tsp or to taste
-Chaat masala ¼ tsp
Prepare Khattay Aloo:
-Cooking oil 1-2 tbs
-Sabut dhania (Coriander seeds) roasted & crushed ½ tbs
-Zeera (Cumin seeds) roasted & crushed 1 tsp
-Adrak lehsan paste (Ginger garlic Paste) 1 tbs
-Lal mirch (Red chilli) crushed 1 tsp
-Chaat masala ½ tsp
-Haldi powder (Turmeric powder) ½ tsp
-Himalayan pink salt ¼ tsp or to taste
-Zarda ka rang (Orange food color) 1/8 tsp
-Water ¼ cup
-Imli pulp (Tamarind pulp) 1/3 Cup
-Aloo (Potatoes) boiled 3-4 medium
Prepare Tarka:
-Cooking oil 2-3 tbs
-Hari mirch (Green chilli) chopped 1
-Zeera (Cumin seeds) ½ tsp
-Lal mirch (Red chilli) crushed 1 pinch
-Curry patta (Curry leaves) 10 -12
Assembling:
-Green Chutney
-Papri
Directions
-Soak phulki in warm water for 1-2 minutes then strain & set aside.
Prepare Dahi Mixture:
-In yogurt,add sugar,pink salt,chaat masala & whisk well.
Prepare Khattay Aloo:
-In a frying pan,add cooking oi,coriander seeds,cumin seeds,ginger garlic paste,red chilli crushed,chaat masala,turmeric powder,pink salt,orange food color,mix well & cook on low flame for 30 seconds.
-Add water,tamarind pulp,mix well & cook on medium flame for 1-2 minutes.
-Add potatoes,mix well & cook on medium flame for 4-5 minutes then cook on high flame for 1-2 minutes.
Prepare Tarka:
-In small frying pan,add cooking oil,green chilli,cumin seeds,red chilli crushed,curry leaves,mix well & fry for 30 seconds.
Assembling:
-In a serving dish,add phulkiyan,prepared dahi mixture,prepared khattay aloo,dahi mixture,green chutney,prepared tarka,papri & serve!

Directions
-Phulki ko neem garam pani mein 1-2 minutes kliya soak ker lein phir strain ker ka side per rakh dein.
Prepare Dahi Mixture:
-Dahi mein cheeni,pink salt aur chaat masala dal ker ache tarhan whisk ker lein.
Prepare Khattay Aloo:
-Frying pan mein cooking oil,sabut dhania,zeera,adrak lehsan paste,lal mirch crushed,chaat masala,haldi powder,pink salt aur zarda ka rand dal ker ache tarhan mix karein aur halki ancch per 30 seconds kliya paka lein.
-Pani aur imli pulp dal ker ache tarhan mix karein aur darmiyani ancch per 1-2 minutes kliya paka lein.
-Aloo dal ker ache tarhan mix karein aur darmiyani ancch per 4-5 minutes kliya paka lein phir tez ancch per 1-2 minutes kliya paka lein.
Prepare Tarka:
-Small frying pan mein cooking oil,hari mirch,zeera,lal mirch crushed aur curyy patta dal ker ache tarhan mix karein aur 30 seconds kliya fry ker lein.
Assembling:
-Serving dish mein phulkiyan,tayyar dahi mixture,tayyar khattay aloo,dahi mixture,green chutney,tayyar tarka aur papri dal ker serve karein!
