Ingredients:
-Mutton kaleji (Liver) 500g
-Water as required
-Sirka (Vinegar) 2 tbs
-Dahi (Yogurt) thick ½ Cup
-Kashmiri lal mirch (Kashmiri red chilli) 2-3 (soaked for 2 hours)
-Lehsan (Garlic) 4-5 cloves
-Sabut lal mirch (Button red chillies) 5-6
-Zeera (Cumin seeds) roasted & crushed ½ tbs
-Himalayan pink salt ½ tsp or to taste
-Lemon juice 2-3 tbs
-Hari mirch (Green chillies) 2-3
-Hara dhania (Fresh coriander) 2 tbs
-Dahi (Yogurt) 3 tbs
-Lal mirch powder (Red chilli powder) 1 tsp or to taste
-Haldi powder (Turmeric powder) ½ tsp
-Sabut dhania (Coriander seeds) roasted & crushed 1 tbs
-Zeera (Cumin seeds) roasted & crushed 1 tbs
-Lal mirch (Red chilli) crushed 1 tbs
-Garam masala powder 1 tsp
-Adrak lehsan paste (Ginger garlic paste) 1 tbs
-Cooking oil ¼ Cup
-Pyaz (Onion) sliced 1 small
-Water 2-3 tbs or as required
-Himalayan pink salt 1 tsp or to taste
-Hari mirch (Green chillies) sliced 2
-Hara dhania (Fresh coriander) chopped
-Makhan (Butter) as required
-Lehsan (Garlic) chopped ½ tsp
-Lal mirch (Red chilli) crushed ¼ tsp
-Hara dhania (Fresh coriander) chopped 1 tsp
-Burger buns
-Pyaz (Onion) rings
Directions:
-In a bowl,add mutton liver,water,vinegar,mix well & let it rest for 5-10 minutes then strain.
-In a blending jar,add yogurt,Kashmiri red chillies,garlic,button red chilies,cumin seeds,pink salt,lemon juice,green chillies,fresh coriander,blend well & set aside.
-In liver,add yogurt,red chilli powder,turmeric powder,coriander seeds,cumin,seeds,red chilli crushed, garam masala powder,ginger garlic paste,mix well & set aside.
-On a griddle,add cooking oil,onion & fry on medium flame until golden.
-Add marinated liver & mix well.
-Gradually add water in between & cook on medium flame for 5-6 minutes.
-Add pink salt,green chilli,fresh coriander,mix well & set aside.
-On griddle,add butter & let it melt.
-Add garlic & mix well.
-Add red chilli crushed & fresh coriander.
-Cut burger buns from center & toast from both sides.
-Add & spread prepared chutney,prepared kaleji,onion rings & cover with top buns (makes 6).

Directions:
-Bowl mein mutton kaleji,pani aur sirka dal ker ache tarhan mix karei aur 5-10 minutes kliya chor dein phir strain ker lein.
-Blending jar mein dahi,Kashmiri lal mirch,lehsan,sabut lal mirch,zeera,pink salt,lemon juice,hari mirch aur hara dhania dal ker ache tarhan blend ker lein & side per rakh dein.
-Kaleji mein dahi,lal mirch powder,haldi powder,dhania powder,zeera,lal mirch crushed,garam masala powder aur adrak lehsa paste dal ker ache tarhan mix karein & side per rakh dein.
-Tawa per cooking oil aur pyaz dal dein aur darmiyani ancch per golden ho tak fry ker lein.
-Marinated kaleji dal ker ache tarhan mix ker lein.
-Thora thora ker ka pani shamil karein aur darmiyani ancch per 5-6 minutes kliya paka lein.
-Pink salt,hari irch aur hara dhania dal ker ache tarhan mix karein & side per rakh dien.
-Tawa per makhan dal ker melt ker lein.
-Lehsan dal ker ache tarhan mix karein.
-Lal mirch crushed aur hara dhania dal dein.
-Burger buns ko center mein sa cut karein aur dono sides sa toast ker lein.
-Tayyar chutney,kaleji aur pyaz rings sal dein aur top buns sa cover ker lein (makes 6).
