Ingredients:

  • Boiling water as required
  • Laung (Cloves) 3
  • Darchini (Cinnamon stick) 1
  • Zeera (Cumin seeds) ½ tsp
  • Namak (Salt) 1 & ½ tbs
  • Podina (Mint leaves) chopped 1 tbs
  • Chawal (Rice) sella ½ kg (soaked for 1 hour)
  • Laung (Cloves) 4-5
  • Hari elaichi (Green cardamom) 5-6
  • Sabut kali mirch (Black peppercorns) 1 tsp
  • Javitri (Mace) 1 piece
  • Jaifil (Nutmeg) ½ piece
  • Tez patta (Bay leaf) 1
  • Badi elaichi (Black cardamom) 2
  • Ghee (Clarified butter) 5-6 tbs
  • Laung (Cloves) 5-6
  • Sabut kali mirch (Black peppercorns) 9-10
  • Darchini (Cinnamon sticks) 3-4
  • Zeera (Cumin seeds) 1 tbs
  • Adrak lehsan paste (Ginger garlic paste) 1 & ½ tbs
  • Mutton mix boti 750g
  • Water 1 litre
  • Namak (Salt) 1 tsp or to taste
  • Pyaz (Onion) fried 3 tbs
  • Hari mirch (Green chilli) paste 2 tbs
  • Dahi (Yogurt) whisked 4 tbs
  • Sabut dhania (Coriander seeds) 1 tbs
  • Aalo (Potatoes) peeled & cubes 2 medium
  • Aloo bukhara (Dried plums) 4-5
  • Adrak (Ginger) julienne 2-inch piece
  • Hari mirch (Green chillies) 5-6
  • Ghee (Clarified butter) 3-4 tbs
  • Hara dhania (Fresh coriander) 1-2 tbs
  • Podina (Mint leaves) 1-2 tbs
  • Lemon 4-5 slices
  • Hari mirch (Green chillies) slit 2-3

Directions:

In a boiling water,add cloves,cinnamon stick,cumin seeds,salt,mint leaves & mix well.

Add soaked rice & mix well,bring it to boil & boil until 50% done then strain & set aside.

In a spice mill,add cloves,green cardamom,black peppercorns,mace,nutmeg,bay leaf,black cardamom & grind to make powder & set aside.

In a pot,add clarified butter & let it melt.

Add cloves,black peppercorns,cinnamon stick,cumin seeds & mix well.

Add ginger garlic paste & mix well for 1 minute.

Add mutton mix boti & mix well until it changes color.

Add water & mix well.

Add salt,fried onion,green chilli paste,yogurt,coriander seeds,mix well & bring it to boil,cover & cook on medium flame for 30-35 minutes.

Add potatoes,dried plums,ginger,green chillies,ground spices & mix well,cover & cook on medium flame for 10-15 minutes or until meat is tender and cook until water is reduced to half cup.

In pot,add boiled rice and make holes for steam with the help of wooden spoon.

Add clarified butter,fresh coriander,mint leaves,lemon slices,green chillies & cover with kitchen cloth & lid and cook on high flame for 5 minutes then steam cook on low flame for 10-12 minutes.

Mix well & serve!
