Ingredients:
Prepare Shawarma Bread:
-Warm water ¾ Cup
-Bareek cheeni (Caster sugar) 1 tbs
-Khameer (Instant yeast) 3 tsp
-Maida (All-purpose flour) sifted 3 Cups
-Dahi (Yogurt) ¼ Cup
-Himalayan pink salt 1 tsp or to taste
-Water 3-4 tbs or as required
-Cooking oil 2 tsp
Prepare Shawarma Chicken:
-Dahi (Yogurt) ½ Cup
-Lemon juice 1 tbs
-Paprika powder 2 tsp
-Adrak powder (Ginger powder) 1 tsp
-Zeera (Cumin seeds) roasted & crushed 1 tsp
-Lal mirch powder (Red chilli powder) 1 tsp or to taste
-Dried oregano 2 tsp
-Himalayan pink salt 1 tsp or to taste
-Lehsan powder (Garlic powder) ½ tbs
-Tikka or Tandoori masala 1 & ½ tbs
-Boneless chicken strips 600g
-Cooking oil 2-3 tbs
-Adrak lehsan (Ginger garlic) crushed 1 tbs
-Hari mirch (Green chilli) chopped 1 tbs
-Tamatar (Tomatoes) sliced 2 medium
-Pyaz (Onion) sliced 2 large
-Mayonnaise ½ Cup
-Hara dhania (Fresh coriander) chopped handful

Directions:
Prepare Shawarma Bread:
-In a bowl,add warm water,caster sugar,instant yeast & mix well,cover & let it rest for 5-10 minutes.
-Add all-purpose flour,yogurt,pink salt,mix well & gather the dough.
-If required,add water & knead until dough is formed.
-Grease with cooking oil,cover & let it proof for 1 hour or until double in size (warm place).
-Take a small dough (90g) & make a ball,sprinkle dry flour & roll out with the help of rolling pin (8-inches).
-On heated griddle,place rolled dough & cook on low flame from both sides until light golden.
-Keep all the shawarma bread covered in a kitchen cloth (makes 7).
Prepare Shawarma Chicken:
-In a bowl,add yogurt,lemon juice,paprika powder,ginger powder,cumin seeds,red chilli powder,dried oregano,pink salt,garlic powder,tikka/tandoori masala & mix well.
-Add chicken & mix well,cover with cling wrap & marinate for 1 hour or overnight in refrigerator.
-On griddle,add cooking oil,ginger garlic,green chilli & mix well.
-Add tomatoes,onion,mix well & cook on medium flame for 2-3 minutes.
-Now add marinated chicken,mix well & cook on medium flame for 10-12 minutes then cook on high flame until it dries up.
-Add mayonnaise,fresh coriander,mix well & set aside.
-On shawarma bread,add & spread mayonnaise,add cooked chicken & roll up.

-Bowl mein warm water,bareek cheeni aur khameer dal ker ache tarhan mix karein aur dhak ker 5-10 minutes kliya chor dein.
-Maida,dahi aur pink salt dal ker ache tarhan mix karein aur dough ko gather ker lein.
-Agar zaroorat ho tou pani shamil karein aur ghond ker dough tayyar ker lein.
-Cooking oil sa grease karein aur dhak ker 1 hour garam jagha per proof hunay kliya rakh dein.
-Chota dough (90g) lein aur ball bana lein,maida chirak dein aur rolling pin ki madad sa bail lein (8-inches).
-Garam tawa per rolled dough rakh dein aur halki ancch per dono sides sa light golden ho janay tak paka lein.
-Shawarma bread ko kitchen cloth mein cover ker ka rakhein (makes 7).
Prepare Shawarma Chicken:
-Bowl mein dahi,lemon juice,paprika powder,adrak powder,zeera powder,lal mirch powder,dried oregano,pink salt, lehsan powder aur tikka/tandoori masala dal ker ache tarhan mix ker lein.
-Chicken dal ker ache tarhan mix karein aur cling film sa cover kernay k bad 1 hour or overnight kliya refrigerator mein marinate ker lein.
-Tawa per cooking oil,adrak lehsan aur hari mirch dal ker ache tarhan mix karein.
-Tamatar aur pyaz dal ker ache tarhan mix karein aur darmiyani ancch per 2-3 minutes kliya paka lein.
-Ab marinated chicken dal ker ache tarhan mix karein aur darmiyani ancch per 10-12 minutes kliya paka lein phir tez ancch per sukh janay tak paka lein.
-Mayonnaise aur hara dhania dal ker ache tarhan mix karein & side per rakh dein.
-Shawarma bread per mayonnaise dal ker pheela lein aur cooked chicken dal ker roll ker lein.
