Ingredients:

-Ghee (Clarified butter) ¾ Cup

-Pyaz (Onion) sliced 2 medium

-Badiyan ka phool (Star anise) 4-5

-Zeera (Cumin seeds) 1 tsp

-Sabut kali mirch (Black peppercorns) ½ tsp

-Hari elaichi (Green cardamom) 7-8

-Laung (Cloves) 3-4

-Badi elaichi (Black cardamom) 1

-Darchini (Cinnamon sticks) 2

-Tez patta (Bay leaves) 2

-Curry patta (Curry leaves) 10-12

-Mutton mix boti 750g

-Adrak lehsan paste (Ginger garlic paste) 1 & ½ tbs

-Hari mirch (Green chilli) crushed 1 & ½ tbs

-Dahi (Yogurt) whisked ½ Cup

-Himalayan pink salt 1 & ½ tbs or to taste

-Water 5-6 Cups

-Aloo (Potatoes) 3 medium

-Sabut dhania (Coriander seeds) roasted & crushed 1 & ½ tbs

-Lal mirch (Red chilli) crushed ½ tbs

-Zeera powder (Cumin powder) 1 & ½ tsp

-Saunf (Fennel seeds) crushed 1 tsp

-Javitri powder (Mace powder) ½ tsp

-Jaifil powder (Nutmeg powder) ¼ tsp

-Chawal (Rice) Sella 500g soaked 1 hour

-Tamatar (Tomato) sliced 1 medium

-Hari mirch (Green chillies) sliced 2-3

-Lemon juice 1 tbs

-Pyaz (Onion) fried

 

Directions:

-In a cauldron,add clarified butter & let it melt.

-Add onion & fry until golden,left ¼ Cup fried onion in cauldron & reserve for later use.

-Add star anise,cumin seeds,black peppercorns,green cardamom,cloves,black cardamom,cinnamon sticks,bay leaves,curry leaves & mix well.

-Add mutton mix boti,ginger garlic paste,green chilli crushed & mix well until it changes color (2-3 minutes).

-Add yogurt,pink salt & mix well.

-Add water,mix well & bring it to boil,cover & cook on low flame for 35-40 minutes.

-Add potatoes,coriander seeds,red chilli crushed,cumin powder,fennel seeds,mace powder,nutmeg powder & mix well,cover & cook on low flame until potatoes are tender (8-10 minutes).

-Check if 2-2.5 cups of stock is there otherwise adjust by adding water.

-Add soaked rice & mix gently.

-Add tomato,green chillies,lemon juice & reserved fried onion,cover with kitchen cloth & lid,put a heavy weight on the lid & cook on low flame for 12-15 minutes.

-Garnish with fried onion & serve with raita!
