Orange Beetroot & Pomegranate Garden Salad

Ingredients:
-Chukandar (Beetroot) peeled 3 medium
-Iceberg lettuce 1 medium
-Pyaz (Onion) 1 medium
-Akhrot (Walnuts) ¼ Cup

-Oranges 2

-Olive oil 3 tbs
-Orange juice 3 tbs
-Lemon juice 1 tbs
-Honey 2 tsp
-Mustard paste 1 tsp
-Kali mirch (Black pepper) crushed ½ tsp
-Himalayan pink salt ½ tsp or to taste
-Anar (Pomegranate seeds) 1 Cup

-Feta cheese crumbled

 

Direction:
-Cut beetroot into slices & place on steam rack,cover & steam cook until beetroot are tender (15-20 minutes) then cut into pieces & set aside.

-Chop iceberg lettuce,onion,walnuts & set aside.

-Peel oranges,remove slices & set aside.

-In a bowl,add olive oil,orange juice,lemon juice,honey,mustard paste,black pepper,pink salt,mix well & set aside.
-In a bowl,add iceberg lettuce,onion,orange,pomegranate seeds,beetroot,walnuts,prepared salad dressing & give it a good mix.

-Add feta cheese & serve.
