Ingredients:
Prepare Pyaz Qeema Filling:
-Cooking oil 3-4 tbs
-Beef qeema (Mince) 350g
-Adrak lehsan paste (Ginger garlic paste) 1 tbs
-Himalayan pink salt 1 tsp or to taste
-Sabut dhania (Coriander seeds) roasted & crushed 1 tbs
-Haldi powder (Turmeric powder) ½ tsp
-Zeera powder (Cumin powder) 1 tsp
-Lal mirch powder (Red chilli powder) 1 tsp or to taste
-Garam masala powder ½ tsp
-Lemon juice 1 & ½ tbs
-Pyaz (Onion) sliced 2-3 large
-Hari mirch (Green chillli) chopped 1 tbs
-Hara dhania (Fresh coriander) chopped 1-2 tbs
Prepare Dough:
-Atta (Wheat flour) sifted 3 Cups
-Himalayan pink salt 1 tsp
-Ghee (Clarified butter) 1 tbs
-Hot water 1 Cup
-Water ¼ Cup or as required
-Maida (All-purpose flour) 2 tbs
-Water 2-3 tbs
-Ghee (Clarified butter) 1-2 tbs
Directions:
Prepare Pyaz Qeema Filling:
-In a wok,add cooking oil,beef mince & mix well until it changes color.
-Add ginger garlic paste,pink salt,coriander seeds,turmeric powder,cumin powder,red chilli powder, garam masala powder,lemon juice,mix well & cook for 1-2 minutes,cover & cook on low flame for 8-10 minutes then cook on high flame until it dries up.
-Add onion,green chilli,fresh coriander,mix well & cook for 2-3 minutes,cover & cook on low flame for 4-5 minutes.
-Let it cool.
Prepare Dough:
-In a bowl,add wheat flour,pink salt,clarified butter & mix well.
-Add hot water & mix well until it crumbles,cover & let it rest for 5 minutes.
-Gradually add water & knead until dough is formed.
-Grease with clarified butter & knead again,cover & let it rest for 15 minutes.
-Knead dough again until smooth,take a small dough (100g),make a ball,sprinkle dry flour & roll out with the help of rolling pin.
-Apply clarified butter & sprinkle dry flour,fold all sides to make a square shape,sprinkle dry flour & roll out with the help of rolling pin.
-In small bowl,add all-purpose flour,water & mix well.
-On rolled dough,add prepared filling,fold one side & apply flour slurry then fold & apply flour slurry & make a square shape paratha.
-Place thick plastic sheet,paratha and wrap with another thick plastic sheet,place another paratha and cover with another thick plastic sheet.
-Make & freeze in a zip lock bag for up to 1 month.
-Heat griddle,place paratha & fry from both sides with clarified butter (makes 7).
Ajza:

-Karahi mein cooking oil aur beef qeema dal dein aur rang tabdeel ho janay tak ache tarhan mix ker lein.
-Adrak lehsan paste,pink salt,sabut dhania,haldi powder,zeera powder,lal mirch powder,garam masala powder aur lemon juice dal ker ache tarhan mix karein aur 1-2 minutes kliya paka lein aur dhak ker halki ancch per 8-10 minutes kliya paka lein phir tez ancch per sukh janay tak paka lein.
-Pyaz,hari mirch aur hara dhania dal ker ache tarhan mix karein aur 2-3 minutes kliya paka lein aur dhak ker halki ancch per 4-5 minutes kliya paka lein.
-Thanda ker lein.
Prepare Dough:
-Bowl mein atta,pink salt aur ghee dal ker ache tarhan mix ker lein.
-Garam pani dal dein aur crumble ho janay tak ache tarhan mix karein aur dhak ker 5 minute kliya chor dein.
-Thora thora ker ka pani shamil karein aur ghond ker dough tayyar ker lein.
-Ghee sa grease karein aur dubhara knead ker lein aur dhak ker 15 minutes kliya chor dein.
-Dough ko smooth ho janay tak dubara ghond lein,chot dough (100g) lein aur ball bana lein,atta chirak dein aur rolling pin ki madad sa bail lein.
-Ghee laga ker atta chirak dein aur tamam sides ko fold ker ka square shape bana lein,atta chirak dein aur rolling pin ki madad sa bail lein.
-Small bowl mein maida aur pani dal ker ache tarhan mix ker lein.
-Rolled dough per tayyar filling dal ker ek side ko fold ker dein aur flour slurry laga ker fold karein aur flour slurry laga ker square shape paratha bana lein.
-Thick plastic sheet rakh ker paratha rakh dein,ek aur thick plastic sheet rakh ker paratha rakh dein aur thick plastic sheet sa cover ker lein.
-Zip lock bag mein rakh ker 1 month kliya freeze ker saktay han.
-Tawa garam karein aur paratha ko dono sides sa ghee mein fry ker lein (makes 7).
