Ingredients:

-Zeera (Cumin seeds) ½ tbs

-Sabut dhania (Coriander seeds) 1 tbs

-Ajwain (Carom seeds) ½ tsp

-Badiyan ka phol (Star anise) 2

-Darchini (Cinnamon sticks) 1-2

-Hari elaichi (Green cardamom) 4-5

-Saunf (Fennel seeds) ½ tbs

-Badi elaichi (Black cardamom) 1

-Laung (Cloves) 3-4

-Jaifal (Nutmeg) ¼ inch piece

-Javitri (Mace) ¼ inch piece

-Tez patta (Bay leaf) 1

-Pipli (Long pepper) 2

-Sonth powder (Ginger powder) ½ tbs

-Kashmiri lal mirch (Kashmiri red chilli) powder 1 tbs

-Himalayan pink salt 1 & ½ tsp or to taste

-Haldi powder (Turmeric powder) 1 tsp

-Lal mirch powder (Red chilli powder) 1 tbs or to taste

-Tatri (Citric acid) ½ tsp

-Atta (Wheat flour) roasted 3 tbs & Baisan (Gram flour) roasted 3 tbs

-Water 1 Cup or as required

-Cooking oil ½ Cup

-Mutton with bones & Bong (Shank) 1250g

-Adrak lehsan paste (Ginger garlic paste) 1 & ½ tbs

-Water 1 litre

-Hara dhania (Fresh coriander) chopped

-Hari mirch (Green chilli) sliced

-Adrak (Ginger) julienne

 

Directions:

-In frying pan,add cumin seeds,coriander seeds,carom seeds,star anise,cinnamon stick,green cardamom, fennel seeds,black cardamom,cloves,nutmeg,mace,bay leaf,long pepper,turn on the flame & dry roast until fragrant.

-Let it cool.

-In a spice mixer,add roasted spices & grind well to make a powder & set aside.

-Add ginger powder,kashmiri red chilli powder,pink salt,turmeric powder,red chilli powder,citric acid & pulse 1-2 times.

-In a bowl,add prepared spice mix,wheat flour & gram flour,mix well.

-Add water,whisk well & set aside.

-In a pressure cooker,add cooking oil,mutton,ginger garlic paste & mix well until it changes color.

-Add prepared nihari mixture & mix well.

-Add water,mix well & bring it to boil,cover & pressure cook on medium flame for 20-25 minutes.

-Garnish with fresh coriander,green chilli,ginger & serve!
