Ingredients:

Prepare Green Chutney:

-Podina (Mint leaves) 1 bunch

-Hara dhania (Fresh coriander) 1 bunch

-Lehsan (Garlic) cloves 3-4

-Adrak (Ginger) 1 inch piece

-Hari mirch (Green chillies) 6-7

-Chanay (Roasted grams) 2 tbs

-Zeera (Cumin seeds) 1 tsp

-Kala namak (Black salt) ¼ tsp

-Namak (Salt) ½ tsp or to taste

-Lemon juice 3-4 tbs

-Water ½ Cup or as required

Prepare Salad Mixture:

-Kheera (Cucumber) chopped 1 Cup

-Aloo (Potato) boiled & cubes 1 Cup

-Tamatar (Tomato) deseeded & chopped 1 Cup

-Pyaz (Onion) chopped ½ Cup

-Hari mirch (Green chilli) chopped 3-4

-Imli pulp (Tamarind pulp) 2 & ½ tbs

-Namak (Salt) ¼ tsp or to taste

-Chaat masala 1 tsp

-Zeera (Cumin seeds) roasted & crushed 1 tsp

-Podina (Mint leaves) chopped 2 tbs

-Hara dhania (Fresh coriander) chopped 2 tbs

Assembling:

-Cooking oil 1-2 tbs

-Phool makhanay (Lotus seeds) 2-3 Cups

-Namak (Salt) ½ tsp or to taste

-Amchor powder (Dried mango powder) ½ tsp

-Lal mirch powder (Red chilli powder) ½ tsp or to taste

-Zeera powder (Cumin powder) ½ tsp

-Dahi (Yogurt) whisked

-Imli ki chutney (Tamarind sauce) as required

-Lal mirch (Red chilli) crushed

-Papri

 

Directions:

Prepare Green Chutney:

-In a blender jug,add mint leaves,fresh coriander,garlic,ginger,green chillies,roasted grams,cumin seeds,black salt,salt,lemon juice,water,blend well & set aside.

Prepare Salad Mixture:

-In a bowl,add cucumber,potato,tomato,onion,green chillies,tamarind pulp,salt,chaat masala,cumin seeds,mint leaves,fresh coriander,mix well & set aside.

Assembling:

-In a wok,add cooking oil,lotus seeds & fry for 2-3 minutes.

-Add salt,dried mango powder,red chilli powder,cumin powder,mix well for a minute & set aside.

-In a serving cup,add tamarind sauce,yogurt,roasted lotus seeds,prepared salad mixture,yogurt, prepared green chutney,tamarind sauce,yogurt & red chilli crushed.

-Garnish with roasted louts seeds,papdi & serve!
