Ingredients:
Prepare Anda Qeema:
-Cooking oil 3-4 tbs
-Pyaz (Onions) finely chopped 3 medium
-Tamatar (Tomatoes) finely chopped 4 medium
-Adrak lehsan paste (Ginger garlic paste) 1 tsp
-Hari mirch (Green chillies) chopped 2
-Sabut dhania (Coriander seeds) crushed ½ tbs
-Haldi powder (Turmeric powder) ½ tsp
-Himalayan pink salt ½ tsp or to taste
-Lal mirch powder (Red chilli powder) 1 tsp or to taste
-Garam masala powder ½ tsp
-Water ¼ Cup
-Water 2-3 tbs
-Anday (Eggs) 3-4
-Hara dhania (Fresh coriander) chopped
-Hara dhania (Fresh coriander) chopped
-Hari mirch (Green chilli) sliced
Prepare Lachha Paratha:
-Maida (All-purpose flour) sifted 3 Cups
-Milk powder 2 tbs
-Himalayan pink salt 1 tsp or to taste
-Sugar powdered ½ tbs
-Ghee (Clarified butter) melted 2 & ½ tbs
-Water ¾ Cup or as required
-Maida (All-purpose flour) 2 tbs
-Ghee (Clarified butter) melted 2 tbs
-Ghee (Clarified butter) 1 tbs
-Ghee (Clarified butter) 1 tbs
Directions:
Prepare Anda Qeema:
-In a wok,add cooking oil,onion & sauté until translucent.
-Add tomatoes,ginger garlic paste,green chilli,mix well & cook for 2-3 minutes.
-Add coriander seeds,turmeric powder,pink salt,red chilli powder,garam masala powder,mix well & cook for 1-2 minutes.
-Add water & mix well,cover & cook on low flame for 4-5 minutes then cook on high flame until oil separates.
-Add water,whisked eggs,mix well & cook on low flame for 2-3 minutes.
-Add fresh coriander.
-Garnish with fresh coriander & green chilli.
Prepare Lachha Paratha:
-In a bowl,add all-purpose flour,milk powder,pink salt,sugar,clarified butter & mix well.
-Gradually add water & knead until dough is formed.
-Grease with clarified butter,cover & let it rest for 15 minutes.
-Knead dough again until smooth.
-Take dough (100g),make a ball,sprinkle dry flour & roll out with the help of rolling pin.
-In a bowl,add all-purpose flour,clarified butter & mix well.
-Apply flour paste & cut into strips with the help of the cutter.
-Gather all layers together,stretch slightly & make a dough ball,cover & let it rest for 4-5 minutes then roll out with the help of rolling pin (6-inches).
-On griddle,add clarified butter & let it melt,place paratha,cover & cook on low flame for a minute,add clarified butter,flip,cover & cook on low flame for a minute then fry from both sides until done (makes 6).
-Serve anda qeema with lachha paratha.

-Karahi mein cooking oil aur pyaz dal dein aur translucent ho janay tak sauté ker lein.
-Tamatar,adrak lehsan paste aur hari mirch dal ker ache tarhan mix karein aur 2-3 minutes kliya paka lein.
-Sabut dhania,haldi powder,pink salt,lal mirch powder aur garam masala powder dal ker ache tarhan mix karein aur 1-2 minutes kliya paka lein.
-Pani dal ker ache tarhan mix karein aur dhak ker halki ancch per 4-5 minutes kliya paka lein phir tez ancch per oil alag ho janay tak paka lein.
-Pani aur anday dal ker ache tarhan mix karein aur halki ancch per 2-3 minutes kliya paka lein.
-Hara dhania dal dein.
-Hara dhania aur hari mirch sa garnish ker ka serve karein.
Prepare Lachha Paratha:
-Bow mein maida,milk powder,pink salt,cheeni aur ghee dal ker ache tarhan mix ker lein.
-Thora thora ker ka pani shamil karein aur ghond ker dough tayyar ker lein.
-Ghee sa grease karein aur dhak ker 15 minutes kliya chor dein.
-Dough ko smooth ho janay tak dubara ghond lein.
-Dough (100g) la ker ball bana lein aur maida chirak ker rolling pin ki madad sa bail lein.
-Bowl mein maida aur ghee dal ker ache tarhan mix ker lein.
-Flour paste dal laga ler cutter ki madad sa strips mein cut ker lein.
-Tamam layers ko gather karein aur dough ball bana ker dhak dein aur 4-5 minutes kliya chor dein phir rolling pin ki madad sa bail lein (6-inches).
-Tawa per ghee dal ker melt ker lein,paratha rakh ker dhak dein aur halki ancch per ek minute kliya paka lein phir ghee dal ker flip karein aur halki ancch per ek minute kliya paka lein aur dono sides sa ghee mein fry ker lein (makes 6).
-Anda qeema ko lachha paratha ka saath serve karein.
