Crispy Potato Salad

A fusion of salad flavors! Air-fried potatoes, cucumber, and onion, all tied together with a touch of soya. Salad just got an upgrade! #happycookingtoyou #foodfusion #araywahh

Ingredients:

-Water as required

-Himalayan pink salt ½ tsp

-Baby potatoes 300g

-Himalayan pink salt to taste

-Kali mirch (Black pepper) crushed to taste

-Cooking oil

-Dahi (Yogurt) whisked ¾ Cup

-Low mayonnaise 3 tbs

-Lemon juice 1 tbs

-Mustard paste 2 tsp

-Pyaz (Onion) chopped 1 medium

-Soya (Dill) chopped ½ Cup

-Lehsan (Garlic) chopped ½ tbs

-Hara pyaz (Spring onion) chopped ¼ Cup

-Kheera (Cucumber) chopped 1 Cup

-Fresh parsley chopped 3-4 tbs

-Himalayan pink salt ¼ tsp or to taste

-Kali mirch (Black pepper) crushed ½ tsp or to taste

-Lal mirch (Red chilli) crushed ½ tsp

-Fresh parsley chopped

Directions:

-In a pot,add water & bring it to boil.

-Add pink salt,baby potatoes,cover & cook on low flame until potatoes are tender (8-10 minutes) than strain.

-Press gently to smash potatoes with the help of a smasher or patty press.

-Sprinkle pink salt,black pepper crushed on smashed potatoes & place them on an air fryer basket.

-Spray cooking oil & air fry at 170°C until potatoes are crispy (18-20 minutes),turn sides in between & set aside.

-In a bowl,add yogurt,low mayonnaise,lemon juice,mustard paste,onion,dill,garlic,spring onion,cucumber, fresh parsley,pink salt,black pepper crushed,red chilli crushed & mix well.

-Crush air fried potatoes,add in salad bowl & give it a good mix.

-Garnish with air fried potatoes,fresh parsley,red chilli crushed & serve!
