Healthy Protein Salad – Lemon Herb Grilled Chicken & Chickpea Salad

Ingredients:

Prepare Lemon Herb Chicken:

-Chicken fillet 160g

-Kali mirch (Black pepper) crushed ½ tsp

-Paprika powder ½ tsp

-Zeera powder (Cumin powder) ½ tsp

-Dried oregano ½ tsp

-Iodized Himalayan pink salt ½ tsp or to taste

-Lehsan (Garlic) crushed 1 tsp

-lemon juice 1&½ tsp

-Fresh parsley chopped handful

-Dalda olive oil (Pomace) 1 tbs

-Dalda Olive oil (Pomace) 2 tbs

Prepare Salad Dressing:

-Dalda extra virgin olive oil 3 tbs

-Lemon juice 2 tbs

-Mustard paste 2 tsp

-Lehsan (Garlic) Chopped 2 cloves

-Lemon zest 1 tsp

-Iodized Himalayan pink salt ½ tsp

-Kali mirch (Black pepper) crushed ½ tsp

-Honey 1 tsp

Prepare Chickpea Salad:

-Kheera (Cucumber) diced 1 Cup

-Pyaz (Onion) Chopped 1 Cup

-Cherry tomatoes (Halved) 1 Cup

-Safed chanay (Chickpea) boiled 1 & ½ Cup

-Fresh parsley (Chopped) handful

Assembling:

Iceberg as required

 

Direction:

Prepare Lemon Herb Chicken:

-Cut chicken fillet into 2 thin fillets & set aside.

-In a flat bowl, add crushed black pepper, paprika powder, cumin powder, oregano, pink salt, garlic, lemon juice, fresh parsley, olive oil (Pomace) & mix well.

-Cover & marinate for 30 minutes.

-In a pan, add olive oil, heat it, add marinated chicken, cook on medium flame for 3-4 minutes each side.

-Place cooked chicken fillet on a cutting board & cut in slices.

Prepare Salad Dressing:

-In a jar, add extra virgin olive oil, lemon juice, mustard paste, lemon zest, pink salt, black pepper crushed, honey, cover & shake well, salad dressing is ready, set aside.

Prepare Chickpea Salad:

-In a bowl, add cucumber, onion, cherry tomato, white chickpea, fresh parsley, prepared salad dressing, mix well.

Assembling:

-In a serving plate, add ice berg lettuce, salad dressing, prepared chickpea salad, & prepared chicken.
