Ingredients:
-Beef mix boti 800g
-Adrak lehsan paste (Ginger garlic paste) 1 & ½ tbs
-Water 3 Cups

-Zeera (Cumin seeds) 1 tbs
-Badiyan ka phool (Star anise) 1
-Kali mirch (Black peppercorns) ½ tsp
-Hari elaichi (Green cardamom) 2-3
-Tez patta (Bay leaves) 2
-Hari mirch (Green chilli) paste 1 & ½ tbs
-Tamatar (Tomato) pureed 2 medium
-Lal mirch powder (Red chilli powder) 1 tsp or to taste
-Dhania powder (Coriander powder) 1 tsp
-Iodized Himalayan pink salt 1 tbs or to taste
-Haldi powder (Turmeric powder) ½ tsp
-Kashmiri lal mirch (Kashmiri red chilli) powder 1 tsp
-Biryani masala 1 & ½ tbs
-Aloo (Potatoes) 3 medium (Cut in 2-3 pieces)
-Water 1 Cup or as required
-Dahi (Yogurt) ¼ Cup
-Imli pulp (Tamarind pulp) 3 tbs
-Hara dhania (Fresh coriander) chopped handful
-Podina (Mint leaves) chopped handful
-Water 2 Cups
-Aloo bukhara (Dried plums) 4-5
-Kewra water 2 tsp
-Chawal (Rice) sella 800g soaked for 30 minutes
-Orange food color ¼ tsp

Directions:
-In a pressure cooker,add beef,ginger garlic paste,water,mix well & bring it to boil,cover & pressure cook on medium flame for 18-20 minutes & set aside.
-In a cooking pot,add cooking oil,onion,cumin seeds,star anise,black peppercorns,green cardamom,bay leaves,mix well & sauté until translucent.
-Add green chilli paste & mix well.
-Add tomato puree,red chilli powder,coriander powder,pink salt,turmeric powder,kashmiri red chilli powder,biryani masala,mix well & cook for 1-2 minutes.
-Add potatoes & mix well.
-Add water & mix well,cover & cook on low flame for 4-5 minutes.
-Add yogurt,tamarind pulp,fresh coriander,mint leaves & mix well.
-Add boiled beef with stock,water & mix well.
-Add dried plums & kewra water,mix well & bring it to boil.
-Add rice,mix well & cook on high flame until water is reduced (3-4 minutes).
-Add orange food color,fried onion,cover with kitchen cloth & lid and steam cook on low flame for 10-12 minutes.
-Serve with raita & salad!

Directions:
-Pressure cooker mein beef, adrak lehsan paste, pani dal kar ache se mix karein, ubal aane dein phir dhakkan band karke 18-20 minute medium flame par pressure cook karein & side per rakh dein.
-Cooking pot mein cooking oil, pyaz, zeera, badyan ka phool, kali mirch, hari ilaichi, tez patta dal kar mix karein aur translucent hone tak sauté karein.
-Hari mirch paste dal kar mix karein.
-Phir tomato puree, lal mirch powder, dhania powder, pink salt, haldi, kashmiri lal mirch powder, biryani masala dal kar ache se mix karein aur 1-2 minute tak bhunein.
-Aloo dal kar mix karein.
-Pani dal kar cover karein aur low flame par 4-5 minute tak pakayein.
-Ab dahi, imli pulp, hara dhania aur podina dal kar mix karein.
-Boiled beef stock ke sath dal kar mix karein.
-Sookhe aloo bukhare aur kewra water dal kar mix karein aur ubal aane dein.
-Chawal dal kar ache se mix karein aur high flame par 3-4 minute tak pakayein jab tak pani reduce ho jaye.
-Orange food color aur fried pyaz dal kar kitchen cloth aur lid se dhak dein aur low flame par 10-12 minute kliya steam cook ker lein.
-Raita aur salad ke sath serve karein.
