Ingredients:
Prepare Sabzi Pulao:

-Hari mirch (Green chilli) paste 2 tbs
-Dahi (Yogurt) whisked ¼ Cup
-Sabut dhania (Coriander seeds) roasted & crushed 1 tbs
-Saunf powder (Fennel powder) 1 tbs
-Zeera powder (Cumin powder) ½ tbs
-Garam masala powder ½ tsp
-Kali mirch powder (Black pepper powder) 1 tsp
-Himalayan pink salt 1 tsp or to taste
-Lal mirch (Red chilli) crushed 1 tsp
-Aloo (Potato) 1 Cup
-Matar (Peas) ¾ Cup
-Gajar (Carrot) ¾ Cup
-Phool gobhi (Cauliflower) florets 1 Cup
-Phaliyan (French beans) ½ Cup
-Water 3 Cups or as required
-Stock cube 1-2
-Chawal (Rice) sella 500g (soaked for 2 hours)
-Shimla mirch (Capsicum) diced 1 small
-Hara pyaz (Spring onion) leaves chopped 2 tbs
-Saffron essence ½ tsp

Prepare Kuchla Raita:
-Hari mirch (Green chillies) 3-4
-Lehsan (Garlic) cloves 5-6
-Sabut lal mirch (Button red chillies) 3-4
-Zeera (Cumin seeds) 1 tsp
-Kala namak (Black salt) ¼ tsp
-Himalayan pink salt ¼ tsp or to taste
-Podina (Mint leaves) handful
-Hara dhania (Fresh coriander) handful
-Lemon juice 1 tsp
-Dahi (Yogurt) whisked 1 Cup
Directions:
Prepare Sabzi Pulao:
-In a pot,add cooking oil,clarified butter & let it melt.
-Add onion,mix well & fry on medium flame until light golden.
-Add black cardamom,bay leaf,star anise,cinnamon stick,green cardamom,black peppercorrs,cumin seeds,curry leaves,green chillies & mix well.
-Add tomato,ginger garlic paste,green chilli paste,mix well & cook on medium flame for 2-3 minutes.
-On low flame,add yogurt,coriander seeds,fennel powder,cumin powder,garam masala powder,black pepper powder,pink salt,red chilli crushed,mix well & cook on medium flame until oil separates.
-Add potato,peas,carrot,cauliflower,french beans,mix well & cook for 2-3 minutes.
-Add water & mix well.
-Add stock cube,bring it to boil,cover & cook on low flame for 6-8 minutes.
-Add rice,mix well & cook on high flame until water is reduced (2-3 minutes).
-Add capsicum,spring onion leaves,saffron essence,fried onion,cover with kitchen cloth & lid and steam cook on low flame for 10-12 minutes.
-Sprinkle fried onion & serve!
Prepare Kuchla Raita:
-In a mortar pestle,add green chillies,garlic,button red chillies,cumin seeds,black salt,pink salt,mint leaves,fresh coriander,lemon juice & crush well.
-Add yogurt,whisk well & serve!

-Ek pot mein cooking oil aur ghee dal ker melt ker lein.
-Pyaz dal kar mix karein aur darmiyani ancch par halka golden hone tak fry karein.
-Badi elaichi,tez patta,badiyan ka phool,darchini,hari elaichi,sabut kali mirch,zeera,curry patta aur hari mirchain dal kar ache sa mix karein.
-Tamatar,adrak lehsan paste aur hari mirch paste al ker acha sa mix karein aur 2-3 minute kliya darmiyani ancch per paka lein.
-Halki ancch per dahi,sabut dhania,saunf powder,zeera powder,garam masala powder,kali mirch powder,pink salt aur lal mirch crushed dal ker ache sa mix karein aur darmiyani ancch per oil alag ho janay tak paka lein.
-Aloo,matar,gajar,phool gobhi aur phaliyan dal kar mix karein aur 2-3 minute kliya paka lein.
-Pani dal kar mix karein.
-Stock cube dal kar ubal anay dein aur dhak kar halki ancch per 6-8 minute tak pakaayein.
-Chawal dal kar mix karein aur tez ancch per 2-3 minute tak pakaayein jab tak pani kam ho jaye.
-Shimla mirch,hara pyaz,saffron essence aur fried pyaz dal ker kitchen cloth & lid se dhak dein aur halki ancch per 10-12 minutes kliya steam cook ker lein.
-Fried pyaz se garnish ker ka serve karein!
Prepare Kuchla Raita:
-Mortar pestle mein hari mirchein,lehsan,sabut lal mirch,zeera,kala namak,pink salt,podina,hara dhania aur lemon juice dal kar ache se crush karein.
-Dahi dal kar whisk ker lein aur serve karein.
